This simple stuffing is perfect for Thanksgiving or even to whip up afterwards with leftovers! This moist and savory dish is nicely balanced with the tart subtle sweetness of dried cranberries.

  • 2 T. olive oil
  • 2 lb. lean ground turkey
  • 1 tsp. sage
  • 3 T. flour
  • 3 ½ C. chicken broth
  • Salt and pepper to taste
  • 1 onion, diced
  • 2 stalks celery, diced
  • 8 C. dried bread, cubed
  • ¾ C. dried cranberries
  • 2 eggs, beaten
  • 2 T. butter

Preheat oven to 425 degrees. In a large skillet, heat oil and cook turkey until brown and cooked through. Season with sage, salt, pepper, and add flour; coat turkey evenly. Pour in 1 ½ cups of broth and cook, stirring frequently, until thickened. Transfer to a greased baking dish. Returning to the skillet, sauté onion and celery until softened. Remove from heat and combine with remaining broth, bread, cranberries, and butter. Spoon mixture over turkey and bake for 20 to 30 minutes until golden brown. Let cool for at least 10 minutes to set up before serving.
