You don't have to worry about fresh summer ingredients. This is a winter salad!

  • 6 oz. dried figs
  • 1 C. hot water
  • 2 sm. fennel bulbs, trimmed and cut into matchstick pieces
  • 2 C. curly endive
  • 1/4 C. olive oil
  • 2 Tbs. balsamic vinegar
  • 1 tsp. salt
  • 1/4 tsp. pepper

In a small bowl, soak figs in hot water for 15 minutes. Drain. Cut each fig into quarters. In a salad bowl, combine fennel, endive and figs. Toss to mix. In a small bowl, combine olive oil, salt and pepper. Beat with a fork to blend. Pour dressing over salad and toss.
