Dried Fruit, Pretzel And Peanut Butter Granola Bars

- 2 C rolled oats
- 1/4 C pecans, chopped
- 1/4 C butter
- 1/4 C brown sugar
- 1/4 C maple syrup
- 1/4 C peanut butter (sweetened or natural, whichever you prefer)
- 2 tsp. vanilla extract
- 1/2 tsp. salt
- 3/4 C crispy rice cereal
- 3/4 C pretzels, chopped
- 1/4 C dried raisins and cranberries
- Chocolate syrup, for drizzle
Preheat oven to 375 degrees.
Spread oats and pecans on a baking tray and roast until golden brown, about 10 to 12 minutes.
In a saucepan over medium heat, whisk together butter, sugar, maple syrup and peanut butter. Once warm, remove from heat and add vanilla and salt.
In a bowl, stir together oats, pecans, rice cereal, pretzels and dried fruit. Add the warm peanut butter mixture and stir to coat everything.
Place in a parchment paper lined baking sheet. Freeze for 20 to 30 minutes. Cut into bars, drizzle with chocolate syrup and serve.
