A nutritious snack, made of dried mango, tomatoes, avocado and more.

Ingredients

  • 1 C. dried mango, finely diced
  • 2 lg. Roma tomatoes, seeded and finely chopped
  • 1/2 small red onion, finely chopped
  • 1 medium avocado, chopped
  • 1 medium lime, juiced
  • 1 Tbs. jalapeno pepper, minced
  • 1/4 C. cilantro, minced
  • salt and pepper to taste

Directions

Rehydrate the dried mango by pouring boiling water over it and letting it set for 15-30 minutes. Drain. Combine all ingredients and chill for 30 minutes.
