Dried Mango Salsa
Ingredients
- 1 C. dried mango, finely diced
- 2 lg. Roma tomatoes, seeded and finely chopped
- 1/2 small red onion, finely chopped
- 1 medium avocado, chopped
- 1 medium lime, juiced
- 1 Tbs. jalapeno pepper, minced
- 1/4 C. cilantro, minced
- salt and pepper to taste
Directions
Rehydrate the dried mango by pouring boiling water over it and letting it set for 15-30 minutes. Drain. Combine all ingredients and chill for 30 minutes.
