  • 2 pounds potatoes
  • ¼ cup heavy cream
  • 3 egg yolks
  • Salt
  • ¼ teaspoon nutmeg
  • ½ teaspoon black pepper
  • 4 tablespoons butter

Begin by peeling the potatoes and cutting them into chunks. Then place the potatoes in a large pot and cover with several inches of cold water with 2 teaspoons of salt. Bring the water to a simmer and cook for 20-25 minutes. While cooking the potatoes, melt 2 tablespoons of butter and set the melted butter aside. Preheat the oven to 425 degrees. Drain the potatoes when they are cooked and then put them back in the pot over low heat. Add 2 tablespoons of butter to the potatoes and mash them until the butter is fully incorporated. Add the nutmeg, black pepper, and cream. Continue to mash the potatoes. Add the egg yolks and continue to mash until the mixture is smooth. Use a piping bag with a star tip and pipe the potatoes onto a cookie sheet. Then paint the potatoes with melted butter before baking them in the oven for 20 minutes.
