Ingredients

  • 2 whole chicken breasts, skinned, boned, halved, and flattened
  • 4 pieces Gouda cheese, cut into 1x1/2x1/2-in. strips
  • sprig of parsley, chopped
  • 1/2 C. flour
  • 2 eggs
  • 1/2 C. milk
  • 1 C. flavored bread crumbs
  • 2 tsp. butter
  • 2 tsp. olive oil
  • 4 wooden toothpicks

Oil an ovenproof casserole dish.  In a mixing bowl, beat eggs and milk.  Add flour to a flat plate, then add bread crumbs to a different flat plate.  On a flat surface, lay out chicken breasts.  Top center of chicken breasts with Gouda cheese and parsley.  Roll chicken like jelly rolls and secure with toothpicks.  Press rolled chicken into flour, then egg mixture.  Roll in bread crumbs, coating completely.  Lay breaded chicken in oiled casserole dish and dot with butter.  Bake in a preheated 400-degree oven for 20 minutes. Remove chicken to heated plates.  Remove toothpicks.
