Easiest Oven-Fried Potato Chips

- 6 white potatoes, sliced 1/4-inch thick
- 1 liberal drizzle vegetable oil
- 1 liberal pinch salt
- 1 liberal pinch pepper
After slicing, soak the potatoes in ice-cold water for 20 minutes. While they soak, preheat the oven to 500 degrees.
Pat the potatoes dry or run them through a salad spinner. Drizzle some oil liberally onto a cookie sheet and brush so that the surface is well coated. Lay the dried potatoes down in the oil and drizzle with some more oil. It's important to brush the tops so both surfaces are fully coated.
Bake for 20-25 minutes or until the ends are brown and crisped. Place them into a wide bowl lined with paper towels and immediately sprinkle liberally with salt and pepper. Toss to season and drain off excess oil. Serve immediately.
