Easter Biscotti
Time needed
Serving Size / Yield
Ingredients
- 5 C. all-purpose flour
- 1 1/2 C. granulated sugar
- 3 tsp. baking powder
- 4 eggs
- 3/4 C. milk
- 2 tsp. vanilla extract
- 2 C. sifted confectioner's sugar
- 1/4 C. cream
- 1 tsp. lemon juice
Directions
Preheat oven to 350 degrees. In a large bowl, combine flour, granulated sugar and baking powder. Stir with a wooden spoon to mix. Make a well in center. In a small bowl, beat eggs just enough to combine. Stir in milk and vanilla. Pour milk mixture into well in center of flour. Beat with a wooden spoon until a soft dough forms. Cover with a kitchen towel and let rest 15 minutes.
Divide dough into 5 pieces. On a floured work surface, roll each piece into 1/2-inch-thick rope. Cut into 3-inch lengths and tie each into a loose knot. Bake on a baking sheet 12-15 minutes until dry and still pale in color. Let the cookies partially cool. While cooling, in a medium bowl, combine confectioner's sugar, cream and lemon juice, beating with a fork until sugar dissolves and mixture is thoroughly blended. Dip tops of warm cookies into sugar glaze and set on a cookie sheet to dry.
