  • 1 C. softened butter
  • 1 C. sugar
  • 1 large egg
  • 1 tsp. vanilla extract
  • 3 C. flour
  • 1 tsp. baking powder
  • 1/2 tsp. salt
  • Icing:
  • 8 C. powdered sugar
  • 6 Tbsp. meringue powder
  • 2 tsp. vanilla extract
  • 12 Tbsp. warm water
  • various food colorings

Beat the butter until creamy and add the sugar and vanilla. Mix in the egg until well combined. Combine the flour, baking powder, and salt in another bowl and slowly add it to the wet ingredients. Form a dough ball and refrigerate 2 hours. Roll out the chilled dough and make egg shapes with a cookie cutter. Preheat the oven to 350 degrees. Place the cookies on a baking sheet and bake for 10 minutes until golden. Cool for 10 minutes. Meanwhile, make the icing by mixing the powdered sugar, meringue powder, vanilla, and water. Beat on medium until smooth. Color the icing with Easter colors and spread it over the cookies to decorate them like eggs.
