  • 1/2 C. currants
  • 1 C. orange juice
  • 1 stick butter, softened
  • 1/2 C. sugar
  • 4 large eggs
  • 1 C. flour
  • 2 tsp. mixed spice
  • 1 pkg. marzipan

Marinate the currants in the orange juice at least 2 hours. Preheat the oven to 300 degrees and mix the butter, sugar, eggs, flour, and spice. Mix in the fruit and beat until incorporated. Pour the cake into the pan and bake for 2 hours until browned. Let the cake cool and roll out the marzipan. Top with rolled marzipan and marzipan decorations of your choice before serving.
