A family-style salad for one of the holiest holidays.

Ingredients

  • 1 10-oz. pkg. frozen peas
  • salt
  • 1 hard-boiled egg yolk
  • 1/4 C. olive oil
  • 1/4 C. lemon juice
  • pepper
  • 2 oz. sliced Italian prosciutto, cut crosswise into narrow strips

Directions

Bring a medium saucepan of water to a boil. Add peas and salt to taste. Cook for 3 minutes or until peas are barely tender. Drain peas. Cool then under cold water. Then blot them dry. In a serving bowl, mash the egg yolk with a fork. Whisk in the oil, lemon juice and salt and pepper to taste. Add peas and toss. Add prosciutto strips and serve.
