  • 1/2 C. flour
  • 1 tsp. garlic powder
  • kosher salt and ground black pepper
  • 2 boneless skinless chicken breasts, cut into 1 1/2-inch pieces
  • 1 C. breadcrumbs
  • 1 egg
  • 1 C. vegetable oil

Pour flour, garlic powder, salt, and pepper into a large ziplock bag. Add chicken pieces and shake to coat. Place breadcrumbs in a shallow baking dish and sprinkle with salt and pepper. In another bowl, whisk egg with one tablespoon of water. Dip each piece of floured chicken in the egg mixture and transfer to breadcrumbs, generously coating. Heat oil until hot in a large frying pan. Working in batches, carefully fry the chicken until golden brown. Transfer to a paper towel-line rack to drain excess grease. Serve warm.
