If you don't like anchovies, don't worry! I bet you won't even be able to taste them in this soup. There are so many other strong and delicious flavors.

Ingredients

  • 1/2 C. olive oil
  • 2 garlic cloves
  • 1/4 lb. anchovies
  • 1 Tbs. chopped parsley
  • 2 Tbs. tomato paste
  • 5 C. water
  • 1/4 tsp. salt
  • 1/4 tsp. pepper

Directions

Heat olive oil. Then add garlic. Brown and remove. Wash, bone and chop anchovies and add to the oil. Add parsley, tomato paste and water. Boil gently for 18 minutes. Serve
