  • 1/4 C. butter
  • 3 cloves minced garlic
  • 1 1/2 lb. cremini mushrooms, sliced
  • 1 diced onion
  • 1 C. red wine
  • 4 C. vegetable broth
  • 1 C. cream
  • 1/2 tsp. thyme
  • 2 T. cornstarch

In a large pot, begin to melt the butter. Add the garlic and mushrooms, and cook for 5 minutes, or until the mushrooms are tender. Season the mushrooms with salt and pepper to taste, then stir in the onion. Cook for another 3 minutes. Stir in the wine and bring the mixture to a boil. Once boiling, reduce the heat and simmer for 5 minutes. Stir in the broth, cream, and thyme. In a small bowl, whisk together the cornstarch with 1/4 cup of water, then stir this mixture into the soup, continuing to stir until the soup begins to thicken. Allow to cook for 3 more minutes, adding salt or pepper to taste.
