Easy and Healthy Sweet Potato Casserole

- 3 lb. sweet potatoes, peeled, boiled, and mashed with a fork
- 1/2 C. whole almonds, unsalted
- 1/4 C. raw sugar
- 1/2 C. heavy cream
- 1/2 tsp. nutmeg
- 1 tsp. salt
- 1 tsp. black pepper
Preheat the oven to 350 degrees.
Place the almonds and raw sugar into a food processor and process. Set aside once it's formed pea sized clusters.
Add the heavy cream, nutmeg, salt, and pepper to the mashed potatoes and mix well. Once combined, place the mashed sweet potatoes into a baking dish and top with the almond and sugar mixture.
Bake for 20 minutes or until warmed through.
