  • 4 C. sugar
  • 1 C. corn syrup
  • 1 C. water
  • 1/4 tsp salt
  • 1 tsp. extract (raspberry or blueberry etc.)
  • 2 drops food coloring

Begin by cutting off the rounded edges of an old whisk so that the wires stick somewhat straight down. Line your countertop (and floor to catch stray sugar strands) with parchment paper. 

In a large pan, heat the sugar, corn syrup, water and salt until the sugar dissolves. Continue heating the mixture until it reaches 320 degrees on a candy thermometer. Pour the liquid into a shallow glass bowl away from the heat. Stir in the extract flavor of your choice and the cooresponding food coloring. 

Dip your cut whisk into the hot liquid and hold over the bowl for a few seconds to drain. Then hold the whisk over your parchment paper and continue to make circular motions until the sugar bunches like a small nest. Quickly wrap the sugar nests around paper straws to create the traditional cotton candy at the festival look. Continue until you have run out of sugar and enjoy!
