  • Meat Loaf:
  • 3 slices of bread, torn
  • 1 ½ lb. ground beef
  • ½ C. milk
  • 8 slices bacon, crumbled
  • ¼ C. dill pickle relish
  • 1 C. cheddar cheese, shredded
  • 1 clove of garlic, chopped
  • ½ C. onion, chopped
  • 1 egg, beaten
  • Topping:
  • 1 T. brown sugar
  • 1/3 C. ketchup

Preheat the oven to 350 degrees. Spray a medium sized pan with cooking spray. In a large bowl, mix the bread and milk. Let it sit for 5 minutes. Add the beef, shredded cheese, relish, garlic, onion, egg and bacon. Leave some bacon on the side. In a small bowl, mix the topping ingredients. Put your meat mixture into your pan. Cover it with the topping mixture. Sprinkle an even layer of bacon over the top. Bake for 1 hour. Let cool for 10 minutes. Serve and enjoy.
