  • 2 lb. russet potatoes, diced
  • 6 slices of bacon, crumbled
  • 2 1/2 T. olive oil
  • 4 oz. cheddar cheese, shredded
  • Light ranch dressing
  • 3 green onions, chopped
  • 1/2 tsp. salt
  • 1/2 tsp. pepper
  • Cooking spray

Preheat oven to 400 degrees. Spray the baking pan with cooking spray. In a large bowl stir the potatoes with the olive oil, salt and pepper. Cover the baking pan with the potatoes. Let them bake for 20 minutes, then remove them from the oven and mix them with a spatula. Place them back into the oven for another 20 minutes, remove and mix. Return them to the oven again and let them bake for 15 minutes. After the 15 minutes, sprinkle the potatoes evenly with the cheese. Bring the potatoes back into the oven for 5 minutes until the cheese is melted. Remove them from the oven and sprinkle them with ranch dressing, bacon and green onions.
