  • 3 T. unsalted butter
  • 3 T. all-purpose flour
  • 1 1/2 tsp. sea salt
  • 1/8 tsp. freshly ground black pepper
  • 2 C. low-fat milk
  • 1 C. shredded Cheddar cheese
  • 5 C. thinly sliced peeled potatoes
  • 1/2 C. chopped yellow onion

Preheat your oven to 350 degrees F. Take out a large saucepan and melt the butter over low heat. Stir in the flour, salt, and pepper into the saucepan and stir until the mixture reaches a smooth consistency. Slowly add the milk into the saucepan. Bring the mixture to a boil and then cook and stir regularly for two minutes, which is around how long it should take to thicken. Stir in the cheese and stir until it is completely melted. Add the potatoes and onion and then transfer the au gratin potatoes into a two-quart baking dish. Cover and bake in your preheated oven for around one hour. Uncover and bake for 30 additional minutes, which is when the potatoes should be tender. Serve.
