Easy Banana Bread

This banana bread recipe is so easy, you don't even need an electric mixer! It's the perfect use for over-browned bananas.

Ingredients

  • 3 or 4 ripe bananas, smashed
  • 1/3 C. melted butter
  • 3/4 C. sugar
  • 1 egg, beaten
  • 1 tsp. vanilla
  • 1 tsp. baking soda
  • Pinch of salt
  • 1 1/2 C. all-purpose flour
  • 1/2 C. semi-sweet chocolate chips (optional)

Directions

Preheat the oven to 350 degrees. With a wooden spoon, mix butter into the mashed bananas in a large mixing bowl. Mix in the sugar, egg, and vanilla. Add baking soda and salt and mix to combine throughout. Mix in flour. Fold in chocolate chips if using. Pour mixture into a buttered 4x8 inch loaf pan. Bake for 1 hour.
