This easy banana nut pumpkin cake is delicious. It is very moist. I had left over pumpkin pie filling. (easy Libby's) and ran out of pie crust. I didn't want to make any more crust or go the store for ready-made pie crust, so I combined banana bread mix with a can of pumpkin to make a delicious dessert. Great for the holidays!

Ingredients

  • 1 can Libby's Easy Pumpkin Pie Mix
  • 1 box banana bread mix with walnuts
  • 1/4-1/2 C. walnuts
  • Cool Whip

Directions

In a bowl, prepare banana bread mix according to directions on the box. In a separate bowl, prepare the Libby's Easy Pumpkin Mix. Pour banana bread mixture into a buttered 10-inch cake pan. Pour the prepared pumpkin pie mix on top of the banana bread, just enough to cover the middle of the cake. Sprinkle with walnuts. Bake at 350 degrees for 40 minutes. Let cool, then server wtih Cool Whip or whipped cream.
