Beer can chicken is great way to evenly cook the whole bird and keep it moist and flavorful. The type of beer, or wine, you choose to cook with is up to you. Have fun with this recipe! Experiment with different flavors. If you want a non-alcoholic chicken, try using spiced chicken broth instead.

  • 5 lb. chicken
  • can of beer
  • 1/4 C. chili powder
  • 1 tsp. dried oregano, crushed
  • 1 tsp. ground cumin
  • 1 tsp salt
  • 1/2 tsp. garlic powder

Remove the giblets and neck from the chicken. Rinse and then pat to dry both the inside and outside of the chicken with paper towels. In a small bowl, mix together the chili powder, oregano, cumin, salt, and garlic powder. Rub the spice mixture on the chicken. Hold the chicken so that the opening of the body cavity is at the bottom and lower it onto a half filled can of beer. Pull the chicken's legs forward to that it rests on it's legs and the can. Stuff a lemon quarter into the neck. Preheat the grill and then reduce heat to medium. Make sure that the grill is set for indirect cooking and that the chicken can stand upright. Close the lid and grill for about 2 hours, or until the chicken is no longer pink. Remove the chicken from the grill and cover with foil. Let it stand for 10 minutes before removing the can carefully from the chicken.
