  • 2 cups + ¼ cup flour
  • 4 teaspoons baking powder
  • ¼ teaspoon baking soda
  • ¾ teaspoon salt + extra for gravy
  • 2 tablespoons butter
  • 2 tablespoons shortening
  • 1 cup buttermilk
  • ½lb spicy sausage crumbles
  • 2 cups milk
  • pepper

Preheat the oven to 450F. In a large bowl, combine the 2 cups flour, baking powder, baking soda and ¾ teaspoon salt. Mix in the butter and shortening with your hands until crumbs form. Make a well in the middle and add the buttermilk. Stir until the dough comes together and becomes sticky. Knead the dough on a floured surface and cut out the biscuits with a 2inch cutter, kneading the remaining dough and repeating the cutout process. Place the biscuits onto a baking sheet and bake for 15-20 minutes, or until they are golden on top. In a skillet, cook the sausage crumbles; remove from pan, reserving 2 tablespoons of fat. Whisk the flour in with the fat and cook over low for 5 minutes. Remove pan from heat and whisk in the milk. Return to heat and stir while the gravy thickens. Add the sausage and season with salt and pepper to taste. Serve with biscuits.
