I love spreading blueberry jam onto a nice warm piece of toast in the mornings. This jam recipe is so easy, and the final product tastes so much better than the store-bought jam.

  • 4 C. fresh blueberries
  • 3 C. sugar
  • 1 Tbs. lemon juice
  • 1 tsp. cinnamon
  • 1 tsp. lemon rind
  • 3 oz. liquid fruit pectin

Puree blueberries in a food processor and then transfer to a pot. Stir in sugar, lemon juice, cinnamon and lemon rind. Bring to a full boil before stirring in the pectin. Stir for one minute. Transfer jam into jars and let process for 5 minutes in a boiling water bath. Refrigerate overnight prior to serving.
