Easy Carrot Cake

Ingredients
- 1 box moist spice cake
- 1 C. water
- 1/3 C. applesauce
- 3 eggs
- 2 C. grated carrots
- 1/2 C. raisins
- 2 tsp. grated orange peel
Directions
Heat oven to 350 degrees. Coat 2 8 or 9-inch round cake pans with non-stick cooking spray. Combine cake mix, applesauce, water, and eggs in large mixing bowl. Beat on low speed one minute. Continue beating on medium speed for 2 minutes, stir in carrots. Pour into prepared pans. Bake 30-35 minutes or until toothpick comes out clean. Cool 10 minutes, turn out onto rack and cool completely. Spread with frosting of choice.
