  • 2 T. unsalted butter
  • 1 small onion, finely chopped
  • 2 C. finely chopped broccoli
  • 3 C. low-sodium chicken broth
  • 1 (12 oz.) can evaporated milk
  • 1/2 tsp. freshly ground black pepper
  • 1 (8 oz.) brick Velveeta, cubed
  • 1 1/2 C. shredded mozzarella cheese
  • 1 C. shredded Parmesan cheese

Take out a small skillet and heat the butter over medium-high heat. Add the onion and cook and stir for around four minutes, which is how long it should take for the onions to be tender. Add the onions into your crockpot and then add the broccoli, chicken broth, milk, and pepper. Cover and cook on low for around three hours, which is about how long it should take for the broccoli to be tender. Stir in the Velveeta until it is melted. Add the remaining cheese and stir until melted. Stir the soup when you are ready to serve and then top with any remaining mozzarella cheese. Serve.
