  • 2 Pounds of Boneless Chicken Breasts
  • 1 Tablespoon of Vegetable Oil
  • 1 Pinch of Salt and Pepper (or to taste)
  • ½ Teaspoon of Garlic Powder
  • 6 Cups of Spinach
  • 3 Tablespoons of Shredded Cheddar Cheese
  • 3 Tablespoons of Shredded Mozzarella Cheese

While your oven is preheating to 400 degrees Fahrenheit, heat a skillet over medium heat and add the vegetable oil. Add in your spinach, salt, pepper, and garlic powder until the leaves have all wilted -- around 2-3 minutes. Sprinkle the same mix of spices over your chicken breasts.

Slice vertical lines into the seasoned chicken, each slice ¼ or ½ an inch away from the last. Don’t cut all the way through your chicken! These cuts create a space for your spinach to be stuffed into.

Place the chicken on a roasting pan and sprinkle the cheddar and mozzarella cheese on top. Bake for 20-25 minutes and let them cool before serving.
