Easy Cheesy Zucchini Casserole

A great way to use the zucchini from your garden. Easy to use and even the non-zucchini lovers will enjoy it.

Ingredients

  • 1 C. mayonnaise
  • 1 onion, minced
  • 1 egg
  • Dash salt and pepper
  • 1 C. shredded sharp cheddar cheese
  • 1/4 C. parmesan cheese
  • 3 medium zucchini, diced, no need to peel

Directions

Mix all ingrdients in a bowl. Place in greased casserole dish. Sprinkle with dry bread crumbs. Bake at 350 degrees for 30 minutes, covered.

Uncover and bake an additional 30 minutes. Serve hot.

  • Great Side Dish! Simple and economical! I used 2 LARGE Z's, yep it makes a bunch but the Wife, M-I-L and a friend enjoying the leftovers today for lunch! Try It!

  • This dish was absolutely fabulous!! I have made it 3 times since discovering this recipe last week. My husband who is not too fond of zucchini even liked it. I even made a large amount and packaged into smaller portions to freeze.
