  • 1/2 C. chopped yellow onion
  • 1 T. vegetable oil
  • 1 (7 oz.) package chicken-flavored rice
  • 1 (14 oz.) can chicken broth
  • 2 C. water
  • 2 C. chopped cooked chicken
  • 1 C. cherry tomatoes
  • 3 T. canned diced red bell peppers, drained
  • 1 tsp. dried basil, crushed
  • 1 1/2 tsp. chili powder
  • 1/8 tsp. ground cumin
  • 1/8 tsp. freshly ground black pepper
  • 1/2 C. shredded Cheddar cheese

Use a medium saucepan to cook the onion in hot oil until it is tender. Stir in the chicken-flavored rice and cook while stirring for 2 minutes. Stir in the chicken broth and water and make sure the ingredients are well blended. Bring the rice mixture to a boil and then reduce the heat. Cover and let the rice mixture simmer for around 20 minutes. When finished, take out a large bowl and pour the rice mixture inside of it. Stir in the cooked chicken, cherry tomatoes, red bell peppers, basil, chili powder, cumin, and pepper.

Once all of the ingredients are thoroughly combined, take out a 2-quart casserole dish and place the mixture inside of it. Bake uncovered for 25 minutes at 425 degrees F. Evenly sprinkle Cheddar cheese on top when finished and let the casserole rest for 5 minutes. Serve.
