  • 2 T. extra virgin olive oil
  • 1 T. paprika
  • 2 tsp. dried oregano
  • salt and pepper to taste
  • 2 lbs. chicken breasts, boneless
  • 2 T. olive oil, divided
  • 3 cloves garlic
  • 1 tsp. red pepper flakes
  • 2 C. white rice
  • 1 bay leaf
  • ½ C. parsley, chopped
  • 2 lemons
  • 2 T. olive oil
  • 1 onion, chopped
  • 1 red bell pepper, chopped
  • 1 lbs. shrimp, peeled

In a bowl, mix together the oil, paprika, oregano, and salt and pepper. Stir in chicken pieces to coat. Set aside in the refrigerator. Meanwhile heat a skillet over medium heat. Stir in garlic, red pepper flakes, and rice for about 3 minutes. Stir in bay leaf, parsley, and lemon juice. Bring to a boil, cover, and let it simmer for 20 minutes. In a different greased skillet stir the marinated chicken from the fridge and cook for 5 minutes. Stir in bell pepper and cook for another 5 minutes. Stir in shrimp to the mixture. In a bowl put the rice and top it off with the meat and seafood mixture.
