The filling for these roll-ups are creamy and rich and the sauce on top is a great complement! They are a fun alternative for regular lasagna and they are quick and easy to make.

  • 8 lasagna noodles
  • 6 oz. cream cheese,softened
  • 1/2 tsp. garlic powder
  • 1 C. mozzarella cheese, shredded
  • 1/2 C. Parmesan cheese, grated
  • 1/2 C. milk
  • 2 C. shredded rotisserie chicken
  • 2 Tbs. fresh parsley, chopped
  • marinara sauce

Heat the oven to 350 degrees. Prepare the noodles according to the directions on the package. Drain and pat dry. Put a sheet of wax paper on a clean, dry surface. Line up each noodle on top of the wax paper. In a bowl, beat the cream cheese and garlic powder together until smooth. Stir in the mozzarella cheese and Parmesan cheese. Mix in the milk until well combined. Stir in the chicken and parsley. Spoon some of the marinara sauce into the bottom of a baking dish until it is completely covered.

Spoon about 1/3 C. chicken and cheese mixture into each noodle and spread it out. Tightly roll up each noodle and place them seam side down into the baking dish. Cover each roll with more sauce so that they don't dry out. Sprinkle each roll with more cheese. Cover the pan with foil and bake for 25 minutes. Uncover and continue to bake for another 5 to 10 minutes, or until the sauce is bubbly and the cheese is melted.
