  • 1½ lbs. chicken breast
  • 4 T. olive oil
  • 2/3 C. lemon juice
  • 1/4 tsp. dried thyme
  • 1/2 tsp. garlic powder
  • 3 carrots, sliced
  • 2 celery stalks, sliced
  • ½ C. white onion, chopped
  • 32 oz. chicken stock or a can of chicken soup
  • Lemon zest
  • Pepper
  • Salt
  • Pasta of choice

Coat the chicken with a layer of pepper. Heat the olive oil in a pan over medium heat. Place the chicken in the pan and cook it until browned. In a pot sauté the carrots, celery, onions, and olive oil for 5 minutes. Add in the chicken stock, lemon zest, lemon juice, thyme, and garlic powder. Let it boil for 30 minutes. Shred the chicken breast and put it back into the pot. Add pepper and salt to taste. Serve over the pasta of your choice.
