Easy Chili
Ingredients
- 1 lb. ground beef
- 1 Tbs. olive oil
- 1/2 C. chopped onions
- 1/2 C. chopped green pepper, if desired
- 2 cans chili hot beans
- 2 cans Mexican stewed tomatoes
- 1 pkg. “Hot” or "Mild" chili seasoning
- chili powder to taste
Directions
Brown the beef in the olive oil with 1/2 cup chopped onions. Then add cans of beans and tomatoes and seasonings. Simmer on low for at least a half hour. As it is cooking, use a spoon to break up the tomatoes.
You can adjust the amount of beans and tomatoes, depending on your preference. I like to match 1 can of beans to 1 can of tomatoes, so that if I get more ground beef, I can get the larger cans of beans and tomatoes and the recipe still works!
