This cheesecake is super rich, and super simple to make! That tart cherry taste pairs perfectly with the cool creamy cheese, and the crumble topping adds a great texture!

Ingredients

  • 1 premade, refrigerated pie crust
  • 16 oz cream cheese
  • 2 eggs
  • 1/2 C. sugar
  • 1 1/2 C. cherries in syrup
  • 2 T. sugar
  • 1/4 tsp. cinnamon
  • 10 graham crackers, crushed
  • 1/2 stick butter

Directions

Place the pie crust on the bottom of a greased, baking dish, and bake at 325 degrees for about 8 minutes or until just light brown. In a food processor, add the cream cheese, eggs, and sugar, blending until smooth. Pour over the crust, then top with a layer of the cherries in syrup. In a small bowl, combine the 2 T. sugar, cinnamon, graham cracker crumbs, and the butter. Use your hands to mix until it becomes crumbly. Put the crumbly mixture over the top of the cherries evenly, then bake for 35 minutes or until the center is beginning to set. Refrigerate for at least 2 hours before serving.
