Easy Chop Suey

Ingredients
- cooking spray
- 1 med. onion, chopped
- 2 med. stalks celery, coarsely chopped
- 2 C. frozen sausage soy crumbles
- 1/3 C. uncooked regular long-grain rice
- 1/4 tsp. pepper
- 1/4 C. reduced-sodium soy sauce
- 2 C. water
- 1 10.75-oz. can condensed cream of mushroom soup
- 1 1-lb. bag frozen vegetable stir-fry, thawed
- 4 C. crisp chow mein noodles
Directions
Spray slow cooker with cooking spray. Generously spray 12-inch skillet with cooking spray. Add onion and celery; generously spray with cooking spray. Cook about 5 minutes, stirring frequently, until crisp-tender. Stir in remaining ingredients except stir-fry vegetables and noodles. Spoon into slow cooker. Cover; cook on Low heat 6 to 7 hours. Stir in stir-fry vegetables. Increase heat setting to High. Cover; cook about 15 minutes longer or until vegetables are tender. Serve with noodles.
