Easy Citrus Salmon Steaks
Ingredients
- 1 fresh or frozen salmon steak, cut 1-inch thick (about 8 oz. total)
- 1 tsp. finely shredded lemon or orange peel
- 1 Tbs. lemon or orange juice
- 1 clove garlic, minced
- 1/8 tsp. pepper
- Nonstick cooking spray
- 1 Tbs. sliced green onion
- 1 medium orange, peeled and sliced crosswise
Directions
Thaw fish, if frozen. Rinse fish; pat dry with paper towels. In a small bowl, stir together lemon or orange peel, lemon or orange juice, garlic and pepper. Coat the unheated rack of a broiler pan with cooking spray. Place fish on rack. Brush with half of the lemon juice mixture. Broil 4 inches from the heat for 5 minutes. Using a wide spatula, carefully turn fish. Brush with the remaining lemon juice mixture. Broil for 3 to 7 minutes more or until fish flakes easily when tested with a fork. To serve, cut the fish into 2 portions and sprinkle with green onions. Serve with orange slices. Yield: 2 servings.
