This is a recipe that is so easy to use and adaptable to most any fruit you like. I have been making it for over 30 years. My oldest son used to go out to the kitchen afterward and eat whatever was left. And, of course, serving it with ice cream is always great.

Time needed

10 min preparation + 20-30 min cooking


  • 2 C. flour
  • 2 C. milk
  • 2 C. sugar (adjust according to the fruits sweetness.)
  • 4 tsp. baking powder
  • dash of salt
  • 2 C. fruit - blueberries and peach are our favorites, I would add 1 tsp. of cinnamon if I use apples

Mix the first 5 ingredients together and pour into a greased 9x13 pan. Pour the fruit over the top (and it ends up on the bottom.) Bake at 350 degrees for 20-30 minutes until light brown and the batter comes out dry when you test with a toothpick. The time depends on what fruit you use and whether they are fresh, frozen or canned- they all work very well.
