Easy Cottage Cheese Pancakes

This easy high protein breakfast is only 4 ingredients. I think they taste just like regular pancakes they way they are, but if you have a sweet tooth use low fat cottage cheese which has a higher sugar content. You can mix ingredients with a spoon or a blender depending on how you like the texture.

Ingredients

  • 6 eggs
  • 1 1/2 C. cottage cheese
  • 1/2 tsp. salt
  • 1/2 C. flour

Directions

In bowl beat eggs then add other ingredients. If using blender or kitchen aid add ingredients in order. Don't over mix. Heat greased skillet & turn when each side browns. Don't worry too much about over or under cooking the pancake, you can tell when their done just like an average pancake. You'll see how great they will turn out every time!

  • I agree with the previous comment; flour has gluten - it shouldn't be in this category; someone without full knowledge of gluten-free could make an error in serving this.
