Easy Cottage Cheese Pancakes

(4 votes) 4 4

This easy, high protein breakfast contains only 4 ingredients. I think they taste just like regular pancakes the way they are, but if you have a sweet tooth use low fat cottage cheese which has a higher sugar content. You can mix ingredients with a spoon or a blender depending on how you like the texture.

In bowl beat eggs then add other ingredients. If using blender or kitchen aid add ingredients in order. Don't over mix. Heat greased skillet & turn when each side browns. Don't worry too much about over or under cooking the pancake, you can tell when their done just like an average pancake. You'll see how great they will turn out every time!

  • I haven't made the recipe yet, but if the ingredient is changed to read "all purpose gluten free flour" (such as Bob's Red Mill) then it would suit the GF category.

  • I agree with the previous comment; flour has gluten - it shouldn't be in this category; someone without full knowledge of gluten-free could make an error in serving this.

  • This recipe shouldn't be in the Gluten Free recipes... Flour has gluten in it.
