Easy Cream Cheese Fruit Squares

No, they're not healthy. But they ARE easy and they ARE delicious, and you DO owe it to yourself to try these blueberry squares!

Ingredients

  • 1 C. sugar, divided
  • 1/3 C. butter
  • 1 1/2 C. graham cracker crumbs
  • 24 oz. cream cheese
  • 4 eggs
  • 1 tsp. vanilla
  • 21 oz. blueberry pie filling

Directions

Preheat oven to 350 degrees. In a medium saucepan, combine 1/4 C. sugar and butter; heat until the butter is melted and smooth. Stir in graham cracker crumbs until well mixed. Press evenly over the bottom of a 13 x 9 inch baking pan. In a large bowl with an electric mixer, beat 24 oz. cream cheese until smooth. Gradually beat in 3/4 C. sugar, then eggs, one at a time, and finally vanilla. Spoon blueberry pie filling over the crust and top with the cream cheese mixture. Bake just until set, about 45 to 50 minutes. Cool then chill until cold, about 2 hours before cutting into squares.
