Easy Creamy Potato Soup

This potato soup recipe makes a quick meal on a cool evening. It's so quick and easy, the hardest part is peeling the potatoes!

Ingredients

  • 8 med. potatoes, cubed
  • 1 med. onion, chopped
  • 1 pkg. cream gravy mix
  • 2 qts. water
  • salt to taste
  • 1 can sliced carrots (optional)
  • 1 can green peas (optional)
  • 1 Tbs. parsley flakes

Directions

Cover potatoes and onion in large pot and bring to a boil. Meanwhile, prepare 2 C. gravy mix according to directions on package. When potatoes start getting tender, you can break them up according to the consistency you prefer. Stir in the gravy and other ingredients. Simmer for about 10 minutes and sprinkle parsley on top.
