  • 1 can refrigerated pizza crust
  • 1 Tbs. olive oil
  • ½ C. chopped onion
  • 3 garlic cloves, minced
  • 2 C. spinach, divided
  • 1 Tbs. lemon juice
  • ¾ C. crumbled feta cheese
  • 2 Tbs. pine nuts
  • 1 tsp. dried oregano
  • 1/2 tsp. salt
  • ¼ tsp. ground cayenne pepper
  • 2 C. marinara sauce

Preheat oven to 450 degrees. In a large pan, heat olive oil over medium high heat. Add onions and cook for 3 minutes, stirring occasionally. Add in garlic and sauté for 2 minutes. Add 1 C. spinach and cook until wilted. Add remaining 1 C. spinach and cook until wilted. Remove from pan and stir in lemon juice, cheese, pine nuts, oregano, salt and cayenne pepper.

Roll out crust on a greased baking sheet. Cut pizza crust into three equal parts and roll into a circle. Use a slotted spoon to transfer spinach mixture to bottom half of dough. Fold over the top of the crust and pinch edges until firmly closed. Repeat for all three calzones. Cut slits into top of each calzone. Bake for 12-15 minutes or until golden brown. Serve with marinara sauce.
