  • 3 boneless, skinless chicken breasts, halved
  • 4 C. chicken broth
  • 2 C. basmati rice
  • 2/3 C. peas
  • 2 C. water.
  • 1 C. yellow onion, chopped
  • 3 tsp. salt
  • 1 tsp. black pepper
  • 1 tsp. ground coriander
  • 2 cloves of garlic, minced
  • 1 tsp. fresh parsley, chopped
  • 1 tsp. Indian red Chile seasoning
  • 3 Tbs. milk
  • 1 lemon

Heat the chicken breasts and chicken broth in a crock pot. Cook for 4 hours on high.

In a bowl, place the basmati rice in cold water for approximately 30 minutes. Drain. When the chicken has 1 ½ hours left, add rice, peas, onion and water to the crockpot. When there are 30 minutes left, add the rest of the ingredients besides the lemon to the crockpot and gently stir.

Once chicken is cooked, drain out any remaining liquid. Squeeze fresh lemon juice on top and serve.
