Celebrate this Easter the easy way by making this simple dessert. You don’t have to do much work and your kids will love it! The coconut flakes are a cute touch creating a nest effect for the malt eggs - and it tastes delicious with the creaminess of the cakes!

  • 24 oz. cream cheese, softened
  • 3 eggs
  • 1 tsp. vanilla extract
  • 1 C. graham cracker crumbs
  • 3 Tbs. butter, melted
  • ¾ C. sugar (+ 2 Tbs.)
  • 1 (9 oz.) pkg. candy eggs
  • 1 C. coconut flakes, toasted

Combine the graham cracker crumbs, two tablespoons of sugar, and the butter. Press the crust into the bottom of a greased muffin tin. In as standing mixer, combine the cream cheese, vanilla, and remaining sugar. Add in the eggs one-by-one and beat them in. Pour the cream cheese mixture in the cups and bake them in a 325 degree oven for 25 minutes. Let the cakes cool in the refrigerator for 2 hours, then top them with coconut flakes. Place the eggs on top and serve.
