First, make your ginger garlic paste by combining the garlic and ginger in a blender. Blend until it's smooth. Next, add three tablespoons of water and blend. Set aside until it's ready to be used.
Heat vegetable oil and ghee in a large pan. Add the bay leaf, cloves, cinnamon sticks, cardamom, shahi jeera, and green chili. Allow it to fry for 30 seconds. Next, add the onions and fry them until they are golden brown. Add the ginger garlic paste and saute for 30 seconds. Stir in the red chili powder, coriander powder, salt, tomato, and yogurt. Let it cook until the tomato has cooked.
Mix in the lemon juice, cilantro, and mint leaves. Set this gravy mix aside.
Boil water and add salt plus a tablespoon of oil to the water. Now add the rice. Cook rice then add it to the gravy, but don't mix. Add a teaspoon of ghee on top of the rice and cover the lid with foil.
Next, place the mix on a pan and cook on low for 10 minutes. Now you may carefully mix the rice with the gravy.
Heat another pan with oil, and add the red chili powder and turmeric powder. Add boiled eggs and allow them to fry.
Remove from the oil and place it on the rice to serve. Heat up your bag of frozen vegetables to mix in and throw in some chopped tomatoes.
