  • 1lb ground beef
  • ½ zucchini, chopped
  • 1 onion, chopped
  • 1 tomato, chopped
  • 1/2 tablespoon olive oil
  • 16oz jar of Pace Sauce
  • 3 cups mozzarella cheese, shredded
  • 12 flour tortillas

Preheat the oven to 350F. In a skillet, brown the beef, stirring to break up the meat. Pour off any fat, add the oil and veggies. Cook until tender. Stir in ½ cup of sauce and 1 cup cheese. Spread ½ cup of sauce into the bottom of a baking dish and set aside. Spread about 2 tablespoons of the meat into the center of each tortilla and then roll the tortillas. Add to the baking dish and then spread the rest of the sauce and cheese on top. Bake for 20 minutes or until the enchiladas are hot and the cheese is melted.
