  • 1 small onion
  • 4 medium carrots
  • 2 large zucchini
  • 2 large cloves garlic
  • 1 tsp. salt
  • 1/2 tsp. pepper
  • 1/4 tsp. red pepper flakes
  • 1/2 C. quick cooking oats
  • 1/4 C. bread crumbs
  • 1/4 C. flour
  • 1/4 C. Parmesan cheese
  • 2 Tbs. fresh basil, minced
  • 1 large egg

In a food processor, grate the onion, zucchini, carrots, and garlic. Grease a skillet with oil and cook the vegetables over medium heat for 10 minutes or until soft. Season with salt, pepper, and red pepper flakes. Put the sauteed vegetables in a large bowl and add the oats, bread crumbs, flour, Parmesan cheese, basil and egg. Mix well and scoop 1 C. mixture onto a clean surface. Shape it into a burger and cook in oil in the skillet over medium heat until golden brown.
