  • 4-6 red potatoes sliced thin
  • 1 yellow onion sliced into rings
  • Salt and pepper to taste
  • 3 T. unsalted butter
  • 3 T. all-purpose flour
  • ½ tsp. Salt
  • 2 C. 2% milk
  • 1 ½ C. shredded mild cheddar cheese
  • 1 garlic clove peeled
  • 4-5 slices bacon

Preheat oven to 400°F. Grease a casserole dish well to prevent sticking. Layer half the potatoes onto bottom of the casserole dish. Layer with the onion, and layer with the remaining potatoes. Season with salt and pepper to taste. In a medium-size saucepan, melt butter over medium heat. Add the flour and salt; whisk constantly one minute. Whisk in milk and let cook until mixture is thick. Fold cheese in while stirring until melted; for about 30 to 60 seconds. Pour cheese over the potatoes, and top with garlic and bacon. Cover the dish with aluminum foil. Bake 1 1/2 hours. Serve warm.
