Easy Hearty Tortellini Soup
Ingredients
- 2 garlic cloves, crushed
- 1 Tbs. margarine
- 2 13 3/4 oz. cans chicken or beef broth
- 1 8 oz. pkg. fresh or frozen cheese tortellini (or meat)
- 1 10 oz. pkg. fresh or frozen spinach, thawed if frozen
- 1 16 oz. can stewed tomatoes, undrained and coarsely chopped
- Grated cheese for garnish on top
Directions
In large saucepan over medium-high heat, cook garlic in margarine for 2 to 3 minutes. Add broth and tortellini and heat to boil. Reduce heat. Simmer for 10 minutes. Add spinach and tomatoes and simmer 5 minutes more. Serve topped with cheese. If making for large family or group just double or triple recipe.
