What’s better than a nice hearty lasagna? A nice hearty one that’s made in under an hour and uses only one pot. This recipe holds all the flavor of a classic lasagna with half the mess!

  • 1 ½ lb. ground beef
  • 1 16 oz. package of lasagna noodles
  • 1 medium white onion, diced
  • 3 cloves of garlic, minced
  • ½ Tbs. oregano
  • 1 Tbs.fresh basil, chopped
  • 1 Tbs. Parsley, chopped
  • 1 tsp.salt
  • 1 tsp. pepper
  • 1 (16 oz.) can tomato sauce
  • 2 (16 oz.) cans crushed tomatoes
  • ½ C. ricotta cheese
  • ½ C. parmesan cheese
  • 8 slices fresh mozzarella

Heat a large skillet on medium-high heat with olive oil. Add the onion, garlic, basil, parsley, and oregano. Cook for about 5 minutes. Add in the ground beef, salt and pepper. Cook the beef until it’s all brown. Mix in half of each can of tomatoes. Break the lasagna noodles to fit in the skillet and place them over the meat and sauce. Completely cover the noodles with the remaining tomatoes. Bring this to a boil before lowering the heat and let simmer (covered) for 20 minutes. Lightly stir the ricotta and parmesan cheese. Place the fresh mozzarella slices on top and cover for another 5 minutes or until the cheese is melted.
