Ingredients

  • 2 medium red bell peppers, tops and seeds removed and reserved
  • 2 medium green bell peppers, tops and seeds removed and reserved
  • 2 medium yellow bell peppers, tops and seeds removed and reserved
  • 1 T. olive oil
  • 1 sweet onion, diced
  • 1 large carrot, peeled, diced
  • 2 cloves garlic, minced
  • 8 oz. lean (90 percent) ground beef
  • 1 tsp. sea salt
  • 1 tsp. freshly ground black pepper
  • 1 (14.5 oz.) can diced tomatoes
  • 1 cup cooked white rice
  • 1 cup grated mozzarella cheese, divided

Preheat your oven to 375 degrees F. Fill a large pot with water and bring it to a boil. Place the peppers and pepper tops into the pot and cook for around six minutes, which is how long it should take for the vegetables to become tender. When finished, remove from water and drain. Use a large frying pan to heat the oil over medium heat. Place the onions inside and cook and stir for around four minutes, which is when they should be translucent. Add the lean ground beef, salt, and pepper, and cook for seven additional minutes, or until the meat is no longer pink. Remember to break the beef into large portions while cooking.

Add the tomatoes and rice into the pan and cook for five more minutes. Stir in 3/4 C. cheese. Begin filling in the peppers by equally dividing the beef mixture among them. Top with remaining cheese and place the pepper lids on top. Bake the stuffed peppers in your preheated oven for around five minutes, which is how long it should take for the cheese to melt and for the peppers to be heated through. Serve.
